Beetroot Raita/ Salad/ Pachadi

Beet roots are not the favourite food for many of us. I was one of them. But my Mom knows how to introduce this super food to the diet because of its ‘Unbeetable’ health benefits. Beetroot also known as Beet; are high in immune-boosting vitamin C, fiber, and essential minerals. Beets also lowers blood pressure, contains folate, increases antioxidants etc… (and many more benefits..)
Beetroot Pachadi is quite simple and easy to make, the only time consuming part is grating beetroot. It's  a very healthy dish with zero oil and has good ingredients like beetroot, peanut and yogurt.
It’s a delicious recipe, almost like a north Indian raita/ salad, and one of easy recipes to add one more side dish to lunch on a busy day.
I am not a great fan of beetroots, but really like the rich and gorgeous pink colour that this vegetable gives to a dish. Do try this easy recipe for good health
