Do you throw away the skin peel of ridge gourd? It contains high dietary fibre and is easy to digest, so an ideal choice for weight loss too. As it is low calorie vegetable, it is good for diabetics. We mostly peel off the skin and use only the inner parts of the vegetables while cooking. In the case of ridge gourd especially, most of the nutrients are present in its skin.

With so many nutritional properties available in the skin, why waste the peel of a vegetable when its healthy? Do not throw them away. It can be peeled, mixed with seasoning and ground to make tasty chutney, a popular side dish with Rice or Chapati in coastal and south cuisine. It also goes very well with Idli/ Dosa.
