A very easy coastal style recipe of capsicum stuffed with goodness of coconut. This is how my mom makes the very simple stuffed capsicum with just 4 ingredients. These coconut stuffed bell peppers/capsicum taste delicious and go very well as a side dish in a meal or even as a starter.
